The Experience

No set menu. No limitations. Just your vision, cooked.

Some occasions don't fit neatly into a wedding, a corporate event, or a private dinner — they're something else entirely. A milestone with a very specific cuisine in mind. A dietary need that's always felt like an afterthought elsewhere. A dish you had once and haven't stopped thinking about.

Chef Rafael builds every custom menu as a genuine collaboration — no cuisine off-limits, no request too specific, drawing on a decade of wine-country technique and a personal range that goes well beyond any one style.

The Philosophy

Cooking without a box to stay inside of

"I never wanted to be known for one style. A decade in Napa Valley taught me French technique, but the food I love most pulls from everywhere — including where I come from. When someone brings me an idea I haven't cooked before, that's the best part of the job."

Custom menu FAQs

The questions people ask most before starting a fully custom menu with Chef Rafael.

As specific as you'd like — a single dish you're trying to recreate, a cuisine tradition you want represented, or a fusion of two cultures. The more detail you bring, the more the menu can reflect exactly what you're picturing.
Every request is genuinely considered. If a specific technique or ingredient needs research ahead of time, that's part of the collaboration — the goal is always to say yes and figure out how, not to steer you toward something more familiar.
Pricing is based on the ingredients, sourcing effort, and complexity of the menu you land on, so it can vary. That's discussed openly during your consultation, well before anything is finalized.
The menu is refined together until it feels right — this is a genuine back-and-forth, not a one-shot proposal. Most menus land after a couple of rounds of conversation and adjustment.
Yes — custom menus scale from an intimate dinner for two to a full event for 100+ guests. Guest count and format are part of the same consultation, not a separate conversation.
That's completely normal, and often where the best menus start. A general sense of flavors you love, an occasion, or even a single memory to build around is more than enough to begin the conversation.
A few weeks' notice is typically enough, though menus requiring specialty or hard-to-source ingredients benefit from more lead time. Reach out as soon as you have a date in mind.
